We’re delighted to share a recipe that has become a guest favourite on our Retreats, blending traditional Italian and South Tyrolean cuisines—our Beetroot and Potato Gnocchi with Yeast Sauce and Toasted Hazelnuts!

By infusing the vibrant, earthy flavours of beetroot—a staple of our local cuisine—into classic gnocchi, we have created a dish that is comforting, healthy and delightfully unique. Potato and Beetroot Gnocchi, Yeast Sauce, and Toasted Hazelnuts
Serves 4
For the gnocchi:
- 500g floury potatoes
- 200g wholemeal rice flour
- 100ml beetroot extract
- 20g extra virgin olive oil
- Salt
- Nutmeg
For the sauce:
- 200ml almond milk
- 15g cornflour
- 15g sunflower oil
- 40g nutritional yeast flakes
- Salt
- Nutmeg
For garnish:
- 20g toasted and peeled hazelnuts
- 60g blanched fresh broad beans
- Sprouts (as needed)
For the gnocchi:
Cook the potatoes and mash them once fully cooked, removing the skins.
While still hot, add the flour, salt, and nutmeg. Mix gently to form a smooth dough and shape the gnocchi.
For the sauce:
Blend or whisk all the ingredients together and bring to a boil. Once it reaches boiling point, the sauce is ready. Keep it warm.
To cook the gnocchi:
Boil the gnocchi in salted water. Once they rise to the surface, quickly sauté them in a pan with extra virgin olive oil and beetroot extract. The gnocchi should absorb the extract completely, turning a bright red colour.
To serve:
Place the gnocchi on top of the yeast sauce and garnish with toasted hazelnuts, fresh broad beans, and sprouts.
